High-altitude winemaking with stripped-back style

High in the Serranía de Ronda, 900 metres above sea level, Los Aguilares is no ordinary vineyard. This centuries-old estate fuses rugged terrain, wild holm oaks and an eco-conscious winemaking philosophy. Guests take on a guided 7 km hike through the estate, pausing for a countryside aperitif, estate wine tasting and an optional picnic lunch—all set against raw, high-altitude Andalusian scenery.

The adventure begins under open skies with a guided hike through the dramatic Dehesa landscape of Los Aguilares. An expert host unpacks how altitude, ancient oaks and tough terrain shape every drop of wine made here. The path cuts across wild vineyard slopes, opening to panoramic views rarely seen by visitors. Midway, the pace slows beneath the oaks for a rustic aperitif before moving on to a tasting of three signature wines paired with locally sourced bites. This is winemaking stripped back to its elements, altitude, climate and craft, offering an authentic take on one of Europe’s southernmost and most untamed vineyards.
