There’s something almost otherworldly about wine that matures in the deep. Depart Estepona on a low-slung catamaran and trace the coastline towards a hidden cellar beneath the sea. The journey starts with an hour of quiet sailing, gliding past glittering bays and rugged headlands as the horizon opens up. At the dive site, a winemaker drops beneath the surface to recover bottles aged on the seabed, transformed from the currents and the pressure of the ocean. Back on deck, the tasting moves at its own pace. Each pour carries sharper minerals, softened textures and deeper aromas shaped by the sea. Between glasses, guests have time to dive off the boat, graze on light bites, or just zone out and watch the water meet the sky. The stories behind each bottle surface slowly, low-key, unfiltered, and effortlessly sun-kissed.
