Every dish combines local ingredients with contemporary techniques to create surprising and memorable flavours. Next to the hotel is an interesting example of the architecture, the S'Argamassa aqueduct. It was built by the Romans to channel fresh water from the interior of the island to a fish farm on the coast. The fish was marinated in herbs such as THYME, rosemary and Ibizan salt to create one of the first sauces in history: garum sauce. Immerse yourself in the most genuine Ibiza culinary traditions.
