Strongly influenced by African, Asian and European cultures, La Habana cuisine is varied and plentiful. It is mostly based on fried food and meat and its most famous dish is the congrí. After eating any of their treats, it is custom to have a very sweet Cuban dessert, followed by a good coffee. In the Cuban capital it is also custom to enjoy refreshing drinks made from white rum, lemon juice and sugar.

Amongst the best-known regional dishes are:

  • Congrí: Typical dish made from fried rice, refried beans, onion and bacon.
  • Frijoles dormidos: Black refried bean puree
  • Moros y cristianos: Prepared from refried beans and rice
  • Roast or smoked pork: Smoked or roast pork usually served warm with a crispy skin
  • Pollo a la criolla (Creole chicken): Soup prepared with chicken and vegetables such as potatoes, tomatoes and onions
  • Ajiaco criollo: Delicious soup prepared with vegetables and different meats, such as pork and chicken
  • La cocada: Sweet made from coconut, sugar and oils
  • Hard meringues: Made from egg whites and sugar and baked until hard on the outside
  • Mojito: Refreshing drink made from white rum, lemon juice, sugar, mineral water and mint leaves
  • Daiquirí: Cocktail made from white rum and lemon or lime juice
